West of France is turned towards the Atlantic Coast. In the north Normandy Brittany have rolling hills, sandy beaches and quiet little harbour towns. Normandy Brittany have a more rugged coast and many neolithic sites. It has quite a distinct atmosphere from the rest of the country; you can still sense the Celtic origin of the region and its inhabitants.

The eastern part of France consists of the Alsace, Lorraine, Franche Comt?and Burgundy regions. The landscape has rolling hills and many beautiful cities, such as Metz, Strasbourg, Nancy and Dijon. This region produces many famous wines, including magnificent pinot noirs and chardonnays valued the world over, as well as the famous "Yellow wine" from the Jura mountain vineyard.

The Center of France is in many ways the most quiet part of France. But the great treasure of this region is the Loire valley , with many great castles and beautiful towns. Chartres with its famous cathedral and Tours rate among the most beautiful French cities.

The Alps are great for skiing in winter and hiking in summer. Albertville, Grenoble and Chamonix have all hosted the Olympic games. But the Alps also have nice towns to visit, such as Chamb閞y, Annecy or Grenoble .

The South with its lovely nature, good food, roman ruins and of course the Riviera draws a lot of visitors every year. Towns like Orange, and Arles but also big cities like Marseille and Toulon are must sees. The Provence is dotted with pleasant small villages. In the South west of France the Dordogne is one of the most quintessential French regions. The valley is so pretty, the towns are so cute and the food is so good, that it is hard to believe that the people who live here go somewhere else for their holidays. The Languedoc has its own language and culture. In the south of the Languedoc you find the Pyrenees, a great mountain range separating France from Spain, where you can hike and ski. The towns of Toulouse and Montpellier are nice and the medieval town of Carcassone is a top destination.

French cuisine is extremely diverse, with only the Chinese having similar variety in their food. This variety is supported by the French passion for good food in all its forms, France's extraordinary range of different geographies and climates which support the local production of all types of ingredients, and France's long and varied history. In many ways, an understanding of the culture of French food is an understanding of France itself.

Meals range from the very basic, such as the traditional baguette plus cheese plus inexpensive wine, to very elaborate affairs than can involve a dozen courses and different wines consumed over several hours. Obviously, the latter type of dining is exceptional for most people. However, it is this more sophisticated dining which is typically found in "French restaurants" outside France, giving many forei gners the mistaken impression that French food is heavy and complicated. In fact, much of the French cuisine is fairly simple, relying on high quality fresh ingredients and loving preparation rather than complex recipes.

It is common in much of France to take a two hour break for lunch, with many working parents (particularly in villages and smaller towns) returning home for lunch. In some areas, mainly in the south of France, even longer lunch breaks are taken. Due to the long lunch break, businesses which close for this period typically reopen around 2PM or so and then stay open until about 7PM.

在法國(guó)的10大葡萄酒產(chǎn)區(qū)中，坐落于法國(guó)、瑞士邊境的汝拉（Jura）酒區(qū)很是特別：這里不僅出產(chǎn)紅葡萄酒和白葡萄酒，還出產(chǎn)一種黃顏色 的葡萄酒。當(dāng)?shù)厝俗院赖匕堰@種色澤明亮、晶瑩華貴的酒，稱(chēng)作酒瓶里的黃金。

汝拉小鎮(zhèn)，在歷史上曾長(zhǎng)期臣屬于強(qiáng)大的勃艮第公國(guó)，直到17世紀(jì)，才真正歸入法國(guó)版圖。古老的汝拉又有“侏羅”之稱(chēng)，因?yàn)樵谶@里，人們不斷地挖掘出許多恐龍化石。不過(guò)，讓汝拉的聲名大大顯赫起來(lái)的，卻還是它出產(chǎn)的黃酒。

白酒變成了黃酒

在汝拉，你能聽(tīng)到許多關(guān)于黃酒的傳說(shuō)，其中流傳最廣的是這樣一個(gè)版本：中世紀(jì)時(shí)，有個(gè)貴族被征召當(dāng)兵，一去6年。等到他回歸故里，發(fā)現(xiàn)家中酒窖里陳釀著許多白葡萄酒。他打開(kāi)橡木桶一看，這些酒早已由白色變成黃色的了，酒液上還浮著厚厚一層酵母。他叫來(lái)工人，要他把變了色的酒全部倒掉；誰(shuí)知工人嘗了一口，驚覺(jué)酒味遠(yuǎn)遠(yuǎn)勝過(guò)原來(lái)的白酒！于是偷偷把酒賣(mài)掉，發(fā)了一筆橫財(cái)逃之夭夭。從此大家都知道了：窖釀3年的白葡萄酒，如果再多釀3年，便會(huì)變成色香味俱佳的黃酒。

汝拉的釀酒行家告訴我，釀造黃酒，葡萄采摘和發(fā)酵工藝都和白酒一樣，但是釀造時(shí)間必須延長(zhǎng)至少3年，而且葡萄品種要選用汝拉特有的Savagnar。另外，釀酒時(shí)，在橡木桶里只能存放三分之二酒液，必須留出空間讓酵母和酒液互相作用。

1000瓶黃酒送宇航員

ARBOIS莊園是汝拉的望族，他們家族對(duì)汝拉酒區(qū)的最大貢獻(xiàn)，就是讓世界知道了汝拉黃酒。那是在上世紀(jì)50年代，前蘇聯(lián)宇航員成功“飛天”。為了紀(jì)念這一偉大事件，ARBOIS家族在汝拉舉辦了一個(gè)題為“月亮”的畫(huà)展。來(lái)自世界各地的不少畫(huà)家送來(lái)了作品。讓ARBOIS家族意想不到的是，前蘇聯(lián)駐法國(guó)大使親自送來(lái)了宇航員在太空中拍攝的月亮照片。

這幅真實(shí)的影畫(huà)，理所當(dāng)然地被評(píng)為一等獎(jiǎng)，而獎(jiǎng)品，便是ARBOIS家族送出的1000瓶黃酒。這條新聞在當(dāng)時(shí)轟動(dòng)了世界。如今，在莫斯科的俄羅斯太空基地里，依舊陳列著一瓶ARBOIS家族當(dāng)年贈(zèng)送的汝拉黃酒，酒的旁邊放著那幅得獎(jiǎng)作品“月球的背面”。

巴斯德酒標(biāo)

汝拉人說(shuō)起黃酒，都會(huì)情不自禁地提到巴斯德。這不僅僅是因?yàn)檫@位著名的生物學(xué)家出生在汝拉的緣故，更因?yàn)榘退沟掠嘘P(guān)酵母自我繁殖的理論，讓汝拉人在釀制黃酒時(shí)得到了啟發(fā)，極大地提升了黃酒的品質(zhì)。

AlaindeLagviche先生的曾祖父和巴斯德是中學(xué)同學(xué)，巴斯德當(dāng)年曾在他這位同學(xué)家的酒窖里做過(guò)酵母在空氣作用下繁殖的試驗(yàn)。據(jù)說(shuō)，當(dāng)時(shí)巴斯德看到他們家釀在橡木桶里的酒裝得滿(mǎn)滿(mǎn)的，便讓倒掉三分之一。事實(shí)證明，這種讓空氣與酵母相互作用而釀出的黃酒，品質(zhì)和色澤都是一流的。

現(xiàn)在，幾乎所有的汝拉人都說(shuō)，是巴斯德教會(huì)了他們釀制上乘的黃酒。在巴斯德誕生100周年時(shí)，汝拉的一些酒莊把他的頭像印在酒標(biāo)上———本來(lái)只是一種紀(jì)念，后來(lái)竟成了身價(jià)的體現(xiàn)：同樣出產(chǎn)年份和品質(zhì)的黃酒，只要貼上巴斯德酒標(biāo)，便能多賣(mài)好幾個(gè)歐元。
